Steps
- Heat the oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
- Prepare the vegetables first: cut the cauliflower, chop the kale, dice the bell pepper and onion, and mince the garlic. Shred the cheddar.
- Bring a large pot of water to a boil, add the cauliflower and cook 4 minutes, then add the kale for 1 more minute. Drain well and spread in the baking dish with the drained great northern beans.
- In the same pot, heat two-thirds of the olive oil over medium heat. Cook the onion and bell pepper 5 minutes until soft, then add the garlic for 30 seconds.
- Sprinkle the flour over the vegetables and stir 1 minute. Slowly whisk in the milk, then the vegetable broth, and simmer, stirring, 3–4 minutes until thickened.
- Take the pot off the heat and stir in two-thirds of the cheddar, the mustard, thyme, nutmeg, salt and black pepper until smooth.
- Pour the sauce over the cauliflower, kale and beans in the dish and stir gently to coat.
- For the seed crust, toss the pumpkin seeds, sesame seeds and breadcrumbs with the remaining one-third of the olive oil and the remaining one-third of the cheddar. Scatter evenly over the casserole.
- Bake uncovered 25–30 minutes until bubbling at the edges and the crust is golden. Rest 10 minutes before serving.
