Cardamom Apple-Pear Compote with Oatmeal

Ingredients

  • 2½ medium450 gApplepeeled and cut into 3/4-inch chunks
  • 1½ medium250 gPearspeeled and cut into 3/4-inch chunks
  • ¼ cup40 gRaisins
  • ½ cup120 gWater
  • 1½ tbsp packed20 gBrown sugar
  • 1 tbsp15 gLemon juice
  • ½ tsp1 gGround cardamom
  • ½ tsp1 gGround cinnamon
  • 1½ tsp6 gVanilla extract
  • 2 cups160 gOld-fashioned rolled oats
  • 1¾ cups (410 ml)480 gAlmond milk, unsweetened
  • ⅛ tsp1 gSalt
  • 3 tbsp20 gGround flaxseed

Steps

  1. Prepare the fruit first: peel, core and chop the apple and pear, then toss them with the lemon juice in a bowl so they don't brown.
  2. In a medium pot, combine the apple, pear, raisins, water, brown sugar, cardamom and cinnamon. Bring to a simmer over medium heat.
  3. Cover and simmer gently for 8 minutes, then uncover and cook 4 to 6 minutes more, stirring now and then, until the fruit is tender but still holds its shape and the liquid is syrupy.
  4. Take the pot off the heat and stir in the vanilla. Scrape the compote into a heatproof bowl and quickly rinse the pot.
  5. For the oatmeal, add the almond milk and salt to the same pot and bring to a gentle simmer over medium heat.
  6. Stir in the oats and cook, stirring often, for 5 minutes until thick and creamy. Stir in the flaxseed.
  7. Divide the oatmeal among 4 bowls and spoon the warm compote over each.
  8. Cool any leftover compote within 2 hours, then cover and refrigerate promptly; use within 3 days. This is a refrigerator compote, not for canning or shelf storage.
