  • ¾ cup60 gOld-fashioned rolled oats
  • ¼ cup chopped30 gWalnutsfinely chopped
  • ⅓ cup grated30 gGrated Parmesan

Steps

  1. Preheat the oven to 425°F (220°C). Toss the butternut with one third of the olive oil and half of the salt on a sheet pan; roast 20 minutes until just tender and browned at the edges.
  2. Meanwhile, warm another third of the olive oil in a large oven-safe skillet over medium heat. Cook the onion 5 minutes until soft, then add the garlic, rosemary and red pepper flakes and cook 1 minute.
  3. Stir in the tomato paste and cook 1 minute, then add the canned tomatoes, the remaining half of the salt and the black pepper. Simmer 5 minutes.
  4. Stir the kale into the sauce until wilted, about 3 minutes, then fold in the beans and the roasted butternut. Spread evenly in the skillet (or move to a 9x13-inch baking dish).
  5. Make the crumb: in a bowl, mix the oats, walnuts, Parmesan and the remaining third of the olive oil until the oats are coated.
  6. Lower the oven to 375°F (190°C). Scatter the oat crumb over the vegetables and bake 25 minutes until bubbling at the edges and the crumb is golden.
  7. Rest 5 minutes, sprinkle with the parsley and serve.
