- 1½ lemons, juiced70 gLemon juice
- 2 cloves6 gGarlicgrated
- 1 tsp2 gGround cumin
- 1 tbsp15 gOlive oil
- ⅓ cup40 gPumpkin seeds (pepitas)
- ¾ tsp4 gSaltdivided
- ½ tsp1 gBlack pepper
Steps
- Prepare the vegetables first: shred the cabbage, grate the carrot, slice the red bell pepper and green onion, and chop the mint and parsley.
- In a pot, bring 400 g of the water and half of the salt to a boil. Stir in the bulgur, cover, and simmer on low for 10 minutes.
- Scatter the frozen edamame over the bulgur, cover again, turn off the heat and let stand 5 minutes until the bulgur is tender and the edamame is hot. Fluff with a fork, spread on a tray and cool about 15 minutes.
- While the bulgur cools, toast the pumpkin seeds in a dry skillet over medium heat for 3 to 4 minutes until they puff and pop; set aside.
- Make the dressing: whisk the tahini, lemon juice, garlic, cumin, olive oil, the remaining half of the salt and the black pepper, then whisk in the remaining 60 g of water a little at a time until creamy and pourable.
- In a large bowl, toss the cabbage with half of the dressing and let it soften for 5 minutes.
- Add the cooled bulgur and edamame, carrot, red bell pepper, green onion, mint and parsley, pour over the remaining half of the dressing and toss well.
- Divide among four bowls and top with the toasted pumpkin seeds.
