Blender Green Herb Tahini Dressing

A bright, pale-green tahini dressing blended smooth with a big handful of basil, cilantro and parsley, tangy with lemon and finished with a whisper of toasted sesame oil.

Blender Green Herb Tahini Dressing

Ingredients

  • ¼ cup60 gTahinistirred well
  • 2½ tbsp35 gLemon juice
  • 1 tsp2 gLemon zest
  • ¼ cup60 gWatercold
  • ½ cup leaves12 gFresh basilleaves only
  • ⅔ cup chopped10 gFresh cilantroleaves and tender stems
  • 2 tbsp chopped8 gFresh parsleyleaves only
  • 1 medium15 gGreen onionsroughly chopped
  • 1 clove3 gGarlicpeeled
  • 1 tsp4 gToasted sesame oil
  • ¾ tsp5 gHoney
  • ¼ tsp1.5 gSalt

Steps

  1. Prep first: pick the basil and parsley leaves, trim the cilantro to leaves and tender stems, roughly chop the green onion and peel the garlic.
  2. Add the lemon juice, lemon zest, garlic and green onion to the blender and pulse a few times to break up the garlic.
  3. Add the tahini, the honey, the sesame oil and the salt, then pour in half of the cold water and blend until thick and creamy; it may seize at first, which is normal.
  4. Add the basil, cilantro and parsley and blend on high until the dressing turns smooth and evenly green.
  5. With the blender running, pour in the remaining half of the water a little at a time until the dressing is pourable like heavy cream.
  6. Scrape into a jar and spoon over leafy salads; it keeps covered in the fridge up to 3 days and can be loosened with a splash more water if it thickens.
