  • ⅔ cup150 gCottage cheese, 2%
  • 2½ oz72 gChia seeds
  • 60 gMedjool dates, pittedroughly chopped

  • ¼ cup40 gSemisweet chocolate chipsroughly chopped

Steps

  1. Pour the skim milk into a blender and add the cottage cheese, dates, vanilla and salt.
  2. Blend on high until completely smooth with no flecks of date, about 1 minute.
  3. Pour the vanilla milk into a large bowl or jar, whisk in the chia seeds, and let stand 5 minutes.
  4. Whisk again to break up any clumps of chia, then cover and chill at least 4 hours or overnight, until thick.
  5. For a silky, mousse-like texture, return the set pudding to the blender and blend for 20 to 30 seconds until smooth; skip this for a classic speckled texture.
  6. Divide the pudding evenly among four glasses or bowls, a quarter in each.
  7. Mix the chopped chocolate chips with the chopped pecans, then scatter a quarter of the chocolate crunch over each pudding just before serving.
