Steps

  1. Preheat the oven to 325°F (165°C). Prepare all vegetables first: chop the onion, mince the garlic, cube the butternut, quarter the mushrooms, cut the green beans and chop the parsley.
  2. Pat the beef chuck dry and season it with half of the salt and half of the black pepper.
  3. Heat half of the olive oil in a Dutch oven over medium-high heat and brown half of the beef chuck on all sides, about 5 minutes; transfer to a plate. Add the remaining half of the olive oil and brown the remaining half of the beef chuck the same way.
  4. Lower the heat to medium, add the onion and cook 5 minutes until soft, then add the garlic, tomato paste, paprika and thyme and stir for 1 minute.
  5. Pour in the tomatoes-canned and beef broth, scraping up the browned bits, then return the beef chuck and its juices to the pot. Bring to a simmer, cover and bake 1 hour 30 minutes.
  6. Stir in the butternut and mushrooms, cover and bake 25 minutes more.
  7. Stir in the green beans and the remaining half of the salt and black pepper, then bake uncovered 15 minutes until the beef is fork-tender (well past 145°F (63°C)), the vegetables are tender and the sauce has thickened.
  8. Rest 5 minutes, then scatter the parsley over the casserole and serve.
