  • 1 medium110 gRed onioncut into wedges
  • ¾ tsp1 gDried rosemary
  • 2½ tbsp35 gOlive oil
  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Preheat the oven to 425°F (220°C) and line two sheet pans with parchment.
  2. Stir the flaxseed into the water and let it thicken for 5 minutes while you prep.
  3. On the first pan, toss the potato-red, red onion and rosemary with two-thirds of the olive oil, the salt and half of the black pepper. Roast for 15 minutes.
  4. Meanwhile, pulse the edamame in a food processor until coarsely chopped. Add the tofu, garlic, soy sauce, oregano, lemon zest and the remaining half of the black pepper and pulse until it holds together but still has texture.
  5. Transfer to a bowl and stir in the flaxseed mixture, breadcrumbs, basil and half of the parsley. Roll into 20 balls about 1.5 inches wide and set them on the second pan; brush with the remaining one-third of the olive oil.
  6. Add the zucchini and cherry tomatoes to the potato pan and toss. Put both pans in the oven and roast for 20 to 25 minutes, turning the balls halfway, until the balls are golden and firm and the potatoes are tender and browned.
  7. Scatter the remaining half of the parsley over the vegetables and serve with the tofu-edamame balls.
