  • 1 medium180 gPearsdiced into 1/2-inch pieces
  • ¾ cup60 gOld-fashioned rolled oats
  • ½ cup chopped50 gWalnutsfinely chopped
  • 1 tbsp15 gUnsalted buttermelted
  • 2 tbsp packed30 gBrown sugardivided
  • 1½ tsp4 gGround cinnamondivided
  • ¼ tsp0.5 gGround nutmeg
  • 1½ tsp3 gLemon zest
  • 1 tsp4 gVanilla extract
  • ⅛ tsp0.5 gSalt

Steps

  1. Preheat the oven to 375°F (190°C) and line a sheet pan with parchment.
  2. Make the crumble: in a bowl, mix the oats, walnuts, melted butter, half of the brown sugar, half of the cinnamon and the salt until clumpy.
  3. Make the fruit: in a second bowl, toss the apple and pear with the remaining half of the brown sugar, the remaining half of the cinnamon and the nutmeg.
  4. Spread the crumble on one half of the sheet pan and the fruit on the other half. Bake for 18 to 20 minutes, stirring the fruit once, until the crumble is golden and the fruit is tender.
  5. Let the crumble cool on the pan so it crisps, and let the fruit cool for about 10 minutes.
  6. Meanwhile, blend or whisk the cottage cheese, Greek yogurt, vanilla and lemon zest until smooth and creamy.
  7. In four glasses, layer half of the cottage cheese cream, then half of the fruit, then the remaining cottage cheese cream and the remaining fruit.
  8. Top each parfait with the crumble just before serving so it stays crunchy.
