  • 1¼ tsp5 gVanilla extract
  • 2½ cups diced400 gMangodivided: half cubed for puree, half finely diced
  • 1 tbsp15 gLime juice
  • 1 tbsp grated6 gFresh gingerpeeled and finely grated
  • 2 cups250 gRaspberries
  • ½ cup60 gPumpkin seeds (pepitas)store-bought roasted, unsalted
  • 1½ tbsp15 gSesame seedsstore-bought toasted
  • ½ tsp1 gGround cinnamon
  • ⅛ tsp1 gSalt

Steps

  1. The night before, whisk the soy milk, almond butter, maple syrup and vanilla in a bowl until smooth, then stir in the oats.
  2. Cover the oat mixture and refrigerate at least 8 hours or overnight, until thick and creamy.
  3. In the morning, split the mango in half: put half the mango (the cubed portion) in a blender with the lime juice and ginger and blend until smooth to make the mango puree.
  4. Finely dice the remaining half of the mango and set it aside for layering.
  5. In a small bowl, toss the roasted pumpkin seeds and toasted sesame seeds with the cinnamon and salt to make the seed crunch.
  6. Stir the soaked oats; if very thick, loosen with a splash of water-free stirring until spoonable.
  7. Build 4 glasses in this order: a quarter of the oats in each glass, then half the mango puree divided among the glasses, then half the raspberries divided among the glasses.
  8. Add the remaining oats to the glasses, then the remaining mango puree, the diced mango and the remaining raspberries.
  9. Top each parfait with a quarter of the seed crunch just before serving so it stays crisp.
