A silky, egg-free nog thickened with cornstarch, rich with coconut milk and warm with brown sugar, nutmeg, cinnamon and a hint of clove.

Warm Spiced Coconut Brown Sugar Nog

Ingredients

  • 3 cups (710 ml)700 gSoy milk, original
  • ⅔ cup160 gCoconut milk, cannedstirred well
  • 3½ tbsp packed50 gBrown sugarpacked
  • 2 tbsp16 gCornstarch
  • 1¼ tsp5 gVanilla extract
  • ½ tsp1 gGround nutmegplus a pinch for garnish
  • ½ tsp1 gGround cinnamon
  • ⅛ tsp0.3 gGround cloves
  • ⅛ tsp0.5 gSalt

Steps

  1. The pantry has no cashews, so this nog gets its creamy body from coconut milk and soy milk. It is egg-free, so no egg temperature step is needed.
  2. In a medium pot, whisk the cornstarch into about a quarter of the soy milk until smooth with no lumps.
  3. Whisk in the remaining soy milk, the coconut milk, brown sugar, cinnamon, cloves, salt and most of the nutmeg, saving a pinch for garnish.
  4. Set the pot over medium heat and whisk constantly until steaming and lightly thickened enough to coat a spoon, about 6 to 8 minutes. Do not let it boil hard.
  5. Take the pot off the heat and stir in the vanilla.
  6. Pour into 4 mugs and dust with the saved pinch of nutmeg. For an iced version, cool the nog, chill it in the fridge for 2 hours, whisk, and pour over ice.

Contains: Soy.
