Vanilla Cardamom Shaken Espresso with Cold Foam

Ingredients

  • 6 shots180 gEspressofreshly brewed
  • 1½ tbsp20 gGranulated sugar
  • 1½ tbsp20 gWater
  • ½ tsp1 gGround cardamom
  • 1 tsp4 gVanilla extract
  • 1 cup (240 ml)240 gWhole milkcold
  • ⅛ tsp0.3 gGround nutmeg

Steps

  1. Make the cardamom-vanilla syrup first: in a small pot, warm the sugar, water and cardamom over medium heat, stirring until the sugar dissolves, about 2 minutes. Take it off the heat, stir in the vanilla and let it cool for 5 minutes.
  2. Brew the espresso while the syrup cools.
  3. Divide the milk: set aside half for the cold foam and keep the remaining half for the glasses.
  4. Fill a cocktail shaker or large jar halfway with ice, add the espresso and all of the cardamom-vanilla syrup, seal and shake hard for 20 seconds until frothy.
  5. Fill two glasses with ice and strain half of the shaken espresso into each glass.
  6. Pour the remaining half of the milk (the portion kept for the glasses) evenly over the espresso in the two glasses.
  7. For the cold foam, froth the reserved half of the milk in a jar by shaking hard for 30 seconds, or with a handheld frother, until thick and foamy.
  8. Spoon the foam over each drink, dust with the nutmeg and serve right away.
