Cardamom Brown Sugar Cold Brew with Sweet Cream

Ingredients

  • 1½ cups (350 ml)360 gBrewed coffeecold brew, chilled
  • ⅔ cup (160 ml)160 gWhole milkcold
  • 2 tbsp (30 ml)30 gHeavy creamcold
  • 1½ tbsp packed24 gBrown sugar
  • 2 tbsp30 gWater
  • ½ tsp1 gGround cardamom
  • ½ tsp2 gVanilla extract
  • a pinch0.2 gSalt

Steps

  1. Make the cardamom syrup first: in a small pot, combine the brown sugar, water, cardamom and salt. Warm over medium heat, stirring, for 2 to 3 minutes until the sugar dissolves and it just simmers.
  2. Take the pot off the heat, stir in the vanilla, and let the syrup cool for about 15 minutes, or until no longer warm.
  3. Meanwhile, make the sweet cream: in a jar, combine the whole milk and heavy cream. Seal and shake hard for about 30 seconds until lightly frothy. Keep it cold.
  4. Fill two tall glasses with ice. Spoon half of the cooled cardamom syrup into each glass.
  5. Pour half of the cold brew coffee into each glass and stir to mix with the syrup.
  6. Slowly pour half of the sweet cream over each glass so it cascades through the coffee. Stir before sipping.
