- 1½ cups (350 ml)366 gMilk, 2%
- ¼ cup (60 ml)60 gHeavy cream
- 3 tbsp40 gGranulated sugar
- ½ tsp1 gGround cardamom
- ¼ tsp0.5 gGround nutmeg
- a pinch0.3 gSalt
- 1½ tsp6 gVanilla extract
- 3 cups (710 ml)720 gBrewed coffeebrewed strong
Steps
- Brew the coffee strong and refrigerate it until cold.
- In a medium pot, whisk the egg, sugar, cardamom, nutmeg and salt until smooth, then slowly whisk in the milk and heavy cream to make the egg mixture.
- Heat the egg mixture in the pot over medium-low heat, stirring constantly, until it thickens slightly and a thermometer reads 160°F (71°C), about 8 to 10 minutes; do not let it boil. This cooked custard is the nog base.
- Remove the pot from the heat, strain the cooked nog base into a bowl and stir in the vanilla.
- Set the bowl in an ice bath and stir for a few minutes to cool promptly, then cover and refrigerate until cold, about 2 hours.
- Fill four glasses with ice, pour in the chilled coffee, then top each with the chilled cooked nog base and stir gently.
