  • 2 tsp2 gDried thyme
  • ¾ tsp1 gDried rosemarycrumbled
  • 1¼ tsp3 gPaprika (sweet or smoked)
  • ½ tsp1 gBlack pepper
  • ½ tsp3 gSalt
  • 2 cups480 gLow-sodium chicken broth
  • 2 tbsp16 gAll-purpose flour
  • ¼ cup chopped15 gFresh parsleychopped
  • ⅓ cup grated30 gGrated Parmesan
  • ¼ cup30 gPumpkin seeds (pepitas)
  • 1½ tbsp15 gSesame seeds

Steps

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with a little of the olive oil, saving the rest for the skillet.
  2. Bring the water to a boil in a large pot, add the pasta and cook 2 minutes less than the package says. Add the broccoli for the last 2 minutes, then drain both.
  3. While the pasta cooks, heat the remaining olive oil in a large oven-safe skillet or pan over medium-high heat. Add the ground turkey, onion, thyme, rosemary, paprika, black pepper and salt and cook, breaking up the meat, until browned with no pink left and it reaches 165°F (74°C), about 8 minutes.
  4. Stir the garlic into the turkey and cook 30 seconds, then sprinkle in the flour and stir 1 minute.
  5. Pour in the chicken broth slowly, stirring, and simmer 2 to 3 minutes until lightly thickened into an herb broth sauce. Stir in half the parsley.
  6. Fold the drained pasta and broccoli into the turkey and herb broth, then spread it in the baking dish.
  7. Mix the parmesan, pumpkin seeds and sesame seeds in a small bowl and scatter this seed crust evenly over the top.
  8. Cover with foil and bake 15 minutes, then uncover and bake 10 to 12 minutes more until bubbling and the seeds are golden.
  9. Rest 5 minutes, sprinkle with the remaining half of the parsley and serve.
