Steps
- Prepare first: rinse the brown lentils, cube the turkey breast and red potatoes, chop the onion, mince the garlic, grate the ginger and chop the cilantro.
- Heat half of the canola oil in a Dutch oven over medium-high heat. Add the turkey breast and brown on two sides, about 5 minutes; it will finish cooking later. Transfer to a plate.
- Lower the heat to medium and add the remaining half of the canola oil. Cook the onion until soft and golden, about 6 minutes.
- Stir in the garlic and ginger for 1 minute, then add the curry powder, cumin and turmeric and stir for 30 seconds until fragrant.
- Add the canned tomatoes, chicken broth, brown lentils and salt. Bring to a boil, cover, and simmer 15 minutes.
- Add the red potatoes, cover, and simmer 15 minutes more, stirring now and then.
- Return the turkey breast with any juices, cover, and simmer 8 to 10 minutes until the lentils and potatoes are tender and the turkey reaches 165°F (74°C) in the center.
- Take the pot off the heat and stir in the lemon juice. Serve in bowls topped with spoonfuls of the Greek yogurt and the cilantro.
