  • 1¼ tsp5 gVanilla extract
  • 2 tbsp30 gUnsalted butterdivided
  • 2 medium360 gPearsthinly sliced
  • 2 tbsp40 gMaple syrup
  • 1¼ cups300 gPlain yogurt, low-fat
  • ⅓ cup chopped40 gWalnutschopped

Steps

  1. Set the butter aside in three portions: half for the pears, one quarter for the batter, and one quarter for greasing the skillet. Melt the batter portion and let it cool slightly.
  2. In a bowl, whisk the flour, three quarters of the cinnamon, the sugar, the baking powder and the salt.
  3. In another bowl, whisk the eggs, milk, vanilla and the melted batter butter. Pour into the flour mixture and whisk until smooth and thin; rest 5 minutes.
  4. Meanwhile, toast the walnuts in a dry nonstick skillet over medium heat for 3 to 4 minutes until fragrant; transfer to a plate.
  5. In the same skillet, melt the pear portion of butter over medium heat. Add the pear and the remaining cinnamon and cook 5 to 6 minutes until tender. Stir in the maple syrup, cook 1 minute, then move the pears to a bowl and wipe the skillet.
  6. Heat the skillet over medium heat and brush lightly with some of the greasing butter. Pour in about 1/4 cup batter and swirl to spread thin. Cook 1 to 2 minutes until the edges set and the underside is golden, flip and cook 1 minute more until set through with no wet batter. Repeat, greasing with the rest of the greasing butter as needed.
  7. Divide the pancakes among plates, spoon the yogurt over them, then top with the warm pears and toasted walnuts.
