Steps

  1. Prepare first: rinse the split peas, cut the cauliflower, chop the tomato and onion, mince the garlic and jalapeño, grate the ginger and chop the cilantro.
  2. In a large pot, bring the split peas, water and turmeric to a boil, skim any foam, then cover partly and simmer for 35 minutes, stirring now and then, until the split peas are soft.
  3. Stir the cauliflower and tomato into the pot and simmer 15 minutes more, until the cauliflower is tender and the split peas break down into a thick dal; add a splash of water if it gets too thick.
  4. Stir in the peas and salt and simmer 3 minutes until the peas are hot. Pour the dal into a serving bowl and keep it warm; wipe out the pot.
  5. In the same pot, heat the canola oil over medium heat. Add the cumin and let it sizzle 20 seconds, then add the onion and cook 6 to 8 minutes until golden.
  6. Add the garlic, ginger and jalapeño and cook 1 minute, then stir in the coriander and curry powder for 30 seconds until fragrant.
  7. Return the dal to the pot, stir it into the spiced onion, and simmer 2 minutes. Turn off the heat and stir in the lemon juice.
  8. Ladle into bowls and top each with the cilantro and a spoonful of the Greek yogurt.
