  • 1½ cups diced250 gMangocubed
  • 1¼ cups chunks200 gPineapplecut into chunks
  • ½ cup (120 ml)120 gOrange juicechilled

  • 1 tbsp20 gHoney
  • 1 tbsp chopped6 gFresh mintleaves picked
  • 1 cup (240 ml)240 gSparkling water (club soda)chilled

Steps

  1. Since passion fruit isn't in the pantry, this cooler uses mango, pineapple, orange juice and lime for a similar tangy-tropical flavor.
  2. Put the mango, pineapple, coconut water, orange juice, lime juice and honey in a blender.
  3. Add half of the mint leaves and blend on high until completely smooth, about 1 minute.
  4. For an extra-silky drink, pour the mixture through a fine sieve into a pitcher, pressing on the pulp; otherwise pour it straight in.
  5. Divide among 4 glasses, over ice if you like, filling each about three-quarters full.
  6. Top each glass with a quarter of the sparkling water (club soda) and stir gently.
  7. Garnish with the remaining half of the mint leaves and serve right away.
