  • 2 medium260 gSweet potatoespeeled and finely grated
  • 1 medium60 gCarrotsfinely grated
  • ¾ cup60 gOld-fashioned rolled oats
  • 1 large50 gEggsbeaten
  • 2 cloves6 gGarlicminced
  • 2 tsp4 gGround cumin
  • 1¾ tsp4 gPaprika (sweet or smoked)smoked
  • ½ tsp1 gBlack pepper
  • 1½ tbsp20 gCanola oildivided
  • 8 slices256 gWhole-wheat bread8 slices
  • 2½ tbsp40 gYellow mustard
  • ½ medium60 gRed onionthinly sliced into rings

Steps

  1. Make the quick pickles first: in a bowl, stir the cider vinegar, water, sugar and one third of the salt until dissolved. Add the cucumber and dill, toss and set aside for at least 20 minutes while you make the patties.
  2. Squeeze the grated sweet potato and carrot in a clean towel to remove excess moisture.
  3. In a large bowl, mash the black beans with a fork until mostly broken up, leaving some pieces for texture.
  4. Add the sweet potato, carrot, oats, egg, garlic, cumin, smoked paprika, black pepper and the remaining two thirds of the salt to the beans. Mix well and let rest 10 minutes so the oats absorb moisture.
  5. Shape the mixture into 4 patties about 3/4 inch thick.
  6. Heat half of the canola oil in a large skillet over medium heat. Cook the patties 5 to 6 minutes, until deeply browned underneath.
  7. Add the remaining half of the canola oil around the patties, flip, cover and cook 5 to 6 minutes more, until the sweet potato is tender and the center reaches 160°F (71°C) for the egg.
  8. While the patties finish, toast the bread slices in a dry pan or toaster.
  9. Spread the mustard on 4 slices of toast, top each with a patty, drained pickles and red onion, then close with the remaining toast and serve.
