- 2 tbsp30 gOlive oil
- 1¾ tsp4 gPaprika (sweet or smoked)smoked
- 1 tsp2 gGround cumin
- 2 tbsp30 gLemon juice
- 1 cup sprigs8 gFresh dillchopped
- 1½ tbsp chopped8 gFresh mintchopped
- 2 cups loosely packed60 gBaby spinach
- ¼ tsp2 gSalt
- ½ tsp1 gBlack pepper
Steps
- Make the yogurt herb spread: stir the Greek yogurt with the dill, the mint, half of the lemon juice and a pinch of the black pepper; chill until needed.
- Heat a large skillet over medium heat and toast the pitas one at a time, dry, about 1 to 2 minutes per side until crisp at the edges; set aside.
- Add half of the olive oil to the skillet over medium-high heat. Cook the bell pepper and red onion for 6 to 7 minutes, until softened and charred in spots; move to a plate.
- Lower the heat to medium and add the remaining half of the olive oil. Add the garlic, smoked paprika and cumin and stir for 30 seconds until fragrant.
- Add the white beans and cook for 3 to 4 minutes, pressing about half of them with a fork so they turn creamy but stay chunky. Stir in the remaining half of the lemon juice, the salt and the rest of the black pepper.
- Spread the yogurt herb spread over each toasted pita, then top with the spinach, the warm crushed white beans and the charred bell pepper and red onion. Cut into wedges and serve right away.
