  • 1 medium110 gRed onionthinly sliced into rings
  • 3½ small600 gRed potatoescut into wedges

Steps

  1. Put the lentils and the water in a small pot, bring to a boil, then simmer 20 to 25 minutes until tender. Drain well and cool 10 minutes.
  2. Meanwhile, preheat the oven to 425°F (220°C). Toss the potato wedges with one third of the canola oil and a pinch of the salt, spread on a lined sheet pan and roast 30 to 35 minutes, turning once, until golden.
  3. Make the sauce: stir the greek yogurt, tahini, lemon juice and one third of the minced garlic in a small bowl. Chill until serving.
  4. In a large bowl, mash the chickpeas and cooked lentils with a fork until mostly smooth with some texture. Stir in the egg, breadcrumbs, the remaining garlic, paprika, cumin, black pepper and the remaining salt. Shape into 8 balls.
  5. Heat half of the remaining canola oil in a large skillet over medium-high heat. Add 4 balls and smash each flat to about 1/2 inch with a sturdy spatula. Cook 3 to 4 minutes per side until deeply browned and crisp and the center reaches 160°F (71°C).
  6. Add the last of the canola oil to the skillet and cook the remaining 4 balls the same way.
  7. Stack two patties in romaine leaves, top with tomato slices, red onion rings and the tahini-yogurt sauce, and serve with the roasted potato wedges.
