Steps

  1. Bring the water to a boil in a saucepan, stir in the bulgur, cover, and simmer on low for 12 minutes; turn off the heat and let it stand covered.
  2. In a large bowl, mix the turkey, egg, breadcrumbs, feta, green onion, half the garlic, half the dill, half the parsley, the lemon zest, half the salt and half the black pepper until just combined. Roll into 20 meatballs.
  3. Heat half the olive oil in a large skillet over medium heat. Add the meatballs and cook, turning often, for 12 to 15 minutes until browned on all sides and 165°F (74°C) in the center.
  4. While the meatballs cook, make the herb sauce: stir together the Greek yogurt, the remaining garlic, the remaining dill, the remaining parsley, two-thirds of the lemon juice, and a quarter of the salt.
  5. For the salad, massage the kale with the remaining olive oil, the remaining lemon juice, the remaining salt and the remaining black pepper for 1 minute, then toss with the apple, cucumber and walnuts.
  6. Fluff the bulgur with a fork. Serve the meatballs over the bulgur, spooned with the herb sauce, with the salad on the side.
