Ingredients
- 2 cups160 gOld-fashioned rolled oats
- ¼ cup whole40 gAlmondsroughly chopped
- ¼ cup chopped30 gWalnutsroughly chopped
- ⅓ cup35 gSweetened shredded coconut
- 2 tbsp30 gAlmond butter, no salt addedstirred well
- 2 tbsp40 gHoney
- 2¼ tsp10 gCanola oil
- 1 tsp4 gVanilla extract
- ½ tsp1 gGround cardamom
- ½ tsp1 gGround cinnamon
- ⅛ tsp1 gSalt
- ⅓ cup50 gRaisinsused as the dried berries
Steps
- Chop the almonds and walnuts, and line a baking sheet with parchment for cooling.
- Toast the shredded coconut in a large dry skillet over medium-low heat, stirring constantly, for 2 to 3 minutes until golden. Tip the coconut into a small bowl and set it aside.
- In a small bowl, stir together the almond butter, honey, vanilla, cardamom, cinnamon and salt to make a smooth glaze.
- Add the canola oil to the same skillet over medium heat, then add the oats, almonds and walnuts. Toast, stirring often, for 7 to 9 minutes until the oats smell nutty and turn light golden.
- Lower the heat to medium-low, drizzle the almond butter glaze over the oat mixture and stir until everything is evenly coated. Keep stirring for 3 to 4 minutes until the granola looks dry and deep golden; watch closely, as honey scorches quickly.
- Spread the granola in a thin layer on the lined baking sheet and let it cool completely, about 20 minutes; it crisps as it cools.
- Break up any large pieces to keep it loose, then toss in the toasted coconut and the raisins. Store in an airtight jar for up to 2 weeks.
