  • 2¼ tsp10 gToasted sesame oil
  • 2 tbsp30 gCanola oil
  • 12⅔ cups3,000 gWater

Steps

  1. Bring the water to a boil in a large pot for the pasta.
  2. In a food processor, pulse the edamame until finely chopped. Add the tofu, the miso paste, the ginger and half the garlic, and pulse into a coarse paste.
  3. Transfer the tofu mixture to a bowl and stir in the cornstarch and breadcrumbs. Roll into 20 balls about 1.5 inches wide.
  4. Make the herb sauce: blend the cilantro, two-thirds of the green onion, the remaining half of the garlic, the lime juice, the soy sauce and the toasted sesame oil until smooth; set aside.
  5. Heat the canola oil in a large nonstick skillet over medium heat. Fry the tofu balls, turning often, until golden and crisp on all sides, 10 to 12 minutes. Move to a plate.
  6. Meanwhile cook the pasta in the boiling water until al dente, adding the snow peas for the last 2 minutes. Scoop out a little of the cooking water, then drain.
  7. Toss the pasta and snow peas with the herb sauce, loosening with a splash of the reserved cooking water.
  8. Divide among 4 bowls, top with the tofu balls, and sprinkle with the sesame seeds and the remaining one-third of the green onion.
