  • 1¼ lb600 gShrimppatted dry
  • ¾ tsp5 gSalt
  • 2 tbsp30 gLime juice

Steps

  1. Before cooking, chop the onion, mince the garlic, grate the ginger, rinse the red lentils, cut the cauliflower into florets, pat the shrimp dry and chop the cilantro.
  2. Heat the canola oil in a large pot over medium heat. Add the onion and cook, stirring, until soft and golden, 6 to 8 minutes.
  3. Add the garlic and ginger and cook for 1 minute, until fragrant.
  4. Stir in the curry powder, cumin and turmeric and cook for 30 seconds, then stir in the tomato paste and cook for 1 minute more.
  5. Add the red lentils and the water, scraping up any browned bits. Bring to a boil, then lower the heat and simmer, partly covered, for 10 minutes, stirring now and then.
  6. Add the cauliflower and the coconut milk, and stir in half of the salt. Simmer, partly covered, until the lentils have broken down and the cauliflower is just tender, about 10 minutes.
  7. Season the shrimp with the remaining half of the salt and stir them into the curry. Simmer gently for 3 to 4 minutes, until the shrimp are pink and opaque and reach 145°F (63°C).
  8. Take the pot off the heat and stir in the lime juice. Ladle into bowls and scatter the cilantro over the top.
