Steps

  1. Preheat the oven to 425°F (220°C) and place a rack in the upper third. Grease a quarter sheet pan (9x13-inch) with about one sixth of the butter; melt the remaining five sixths of the butter and let it cool slightly.
  2. Blend the oats in a blender until they form a coarse flour.
  3. In a large bowl, whisk the oat flour, whole wheat flour, baking powder, cinnamon and salt.
  4. In a second bowl, whisk the mashed banana, milk, egg, melted butter, half of the maple syrup and the vanilla until smooth.
  5. Pour the banana mixture into the flour mixture and stir just until no dry streaks remain; let the batter rest 5 minutes to thicken.
  6. Spread the batter evenly in the greased pan and bake 16 to 18 minutes, until golden and a toothpick in the center comes out clean.
  7. Turn on the broiler and broil 1 to 2 minutes, watching closely, until the top is crisp and deeply golden.
  8. While it bakes, toss the pear, cherries and orange together in a bowl.
  9. Cool the bake in the pan for 3 minutes, then cut into 8 squares. Serve 2 squares per plate, topped with the fruit and drizzled with the remaining half of the maple syrup.
