- 1¼ tsp3 gPaprika (sweet or smoked)

- 4 large pitas256 gWhole-wheat pitaeach cut into 4 wedges
- 2 tsp2 gDried oregano
- 1 tsp1 gDried thyme
- 2¾ tsp8 gSesame seeds
Steps
- Prepare first: press the tofu-firm between paper towels for 10 minutes, then crumble it into large pieces. Chop the onion, red bell pepper, parsley and mint, mince the garlic, thaw the edamame, and cut each pita into 4 wedges.
- Make the za'atar topping: stir the oregano, thyme and sesame seeds together in a small bowl.
- Heat half the olive oil in a large skillet over medium heat. Cook the onion and red bell pepper for 6 minutes until soft, then stir in the garlic, cumin and paprika for 30 seconds.
- Pour in the canned tomatoes and simmer 6–8 minutes, stirring now and then, until thick and saucy.
- Add the tofu, edamame, salt and black pepper. Fold gently and simmer 6–8 minutes until the tofu is hot through and coated in the sauce.
- Meanwhile, brush the pita wedges with the remaining half of the olive oil, sprinkle with the za'atar topping, and toast in a second skillet or toaster oven 2–3 minutes per side until crisp.
- Take the scramble off the heat, stir in the lemon juice, and scatter the parsley and mint over the top.
- Divide the scramble among 4 plates and serve with the za'atar pita toast.
