Steps
- Bring 480 g (about 2 cups) of the water and the brown rice to a boil in a saucepan, cover, reduce heat to low and simmer 40–45 minutes until tender; rest 5 minutes covered.
- While the rice cooks, cut the salmon, broccoli and carrot and prepare the garlic, ginger and green onion.
- Make the sauce: in a bowl, whisk the soy sauce, honey, cider vinegar, toasted sesame oil, half the cornstarch and the remaining 120 g (about 1/2 cup) of water.
- Pat the salmon dry and toss it with the other half of the cornstarch.
- Heat half the canola oil in a large skillet over medium-high heat. Sear the salmon 2 minutes per side until golden and it reaches 145°F (63°C); transfer to a plate.
- Add the remaining half of the canola oil to the skillet. Stir-fry the carrot 2 minutes, then add the broccoli and stir-fry 3–4 minutes until crisp-tender.
- Add the garlic and ginger and stir 30 seconds until fragrant.
- Stir the sauce, pour it into the skillet and simmer 1 minute until glossy and thickened. Gently fold in the salmon to coat.
- Spoon the stir-fry over the brown rice and top with the sesame seeds and green onion.
