Steps
- Preheat the oven to 375°F (190°C). Dice the onion, mince the garlic, cube the butternut and chop the kale.
- Heat the olive oil in a Dutch oven over medium-high heat. Add the ground pork and cook, breaking it up, until browned and it reaches 160°F (71°C), about 7 minutes.
- Add the onion and butternut and cook 5 minutes. Stir in the garlic, tomato paste, rosemary, paprika, red pepper flakes, salt and black pepper and cook 1 minute.
- Pour in the chicken broth and canned tomatoes and bring to a boil. Stir in the pasta, cover, lower the heat and simmer 10–12 minutes, stirring now and then, until the pasta is just tender and most of the liquid is absorbed.
- Stir in the kale and half the parmesan until the kale wilts.
- In a small bowl, mix the pumpkin seeds, sesame seeds, breadcrumbs and the remaining half of the parmesan to make the seed crust; scatter it over the pasta.
- Bake the Dutch oven uncovered 15–20 minutes until bubbling and the crust is golden. Rest 5 minutes before serving.
