Steps
- Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
- Toss the sweet potato with the olive oil, cumin, paprika, black pepper and half of the salt. Spread on the pan and roast 25 to 30 minutes, turning once, until browned and tender. Add the pumpkin seeds to a corner of the pan for the last 5 minutes to toast.
- Meanwhile, bring 700 g of the water to a boil in a pot, add the lentils and simmer 10 minutes. Add the quinoa and simmer 12 to 15 minutes more until both are tender. Drain well, spread on a plate and let cool slightly.
- Make the dressing: whisk the tahini, lemon juice, garlic, maple syrup and the remaining half of the salt, then whisk in the remaining 200 g of water a little at a time until creamy and pourable.
- In a large bowl, rub the kale with a spoonful of the dressing for 1 minute to soften it, then add the spinach, red onion and parsley.
- Add the lentils and quinoa and the roasted sweet potato, pour over the rest of the dressing and toss gently.
- Divide among 4 bowls and scatter the toasted pumpkin seeds on top.
