Steps
- Prep first: cut the chicken breast, slice the mushrooms, cube the butternut squash, dice the onion, mince the garlic and chop the parsley.
- Season the chicken with half of the salt. Set the pressure cooker to sauté, heat half of the olive oil and brown the chicken on two sides, about 4 minutes; it will finish cooking later. Move the chicken to a plate.
- Add the remaining half of the olive oil and the mushrooms. Cook, stirring now and then, until browned and their liquid has cooked off, about 6 minutes.
- Add the onion and cook until soft, about 3 minutes, then stir in the garlic and thyme for 30 seconds.
- Add the rice and stir for 1 to 2 minutes until the grains look glossy and slightly translucent at the edges.
- Pour in the chicken broth and scrape up any browned bits from the bottom. Stir in the butternut squash and return the chicken with its juices.
- Lock the lid and cook at high pressure for 6 minutes. Quick-release the pressure, then check that the chicken reaches 165°F (74°C).
- On sauté, stir vigorously for 1 to 2 minutes until creamy. Stir in the butter, Parmesan, lemon juice, the remaining half of the salt and the black pepper; add a splash of hot water if it is too thick.
- Spoon into bowls and scatter the parsley on top.
