Ingredients
- 1¾ cups150 gOld-fashioned rolled oats
- ½ cup chopped50 gPecansroughly chopped
- ½ cup45 gSweetened shredded coconut
- 2 tbsp15 gGround flaxseed
- 3 tbsp packed40 gBrown sugarpacked
- 2 tbsp25 gUnsalted buttermelted
- 2½ tbsp40 gUnsweetened applesauce
- ¾ tsp2 gGround cinnamon
- 1 tsp4 gVanilla extract
- ¼ tsp1.5 gSalt
- ¼ cup40 gSemisweet chocolate chipsroughly chopped
Steps
- Preheat the oven to 300°F (150°C) and line a rimmed baking sheet with parchment.
- In a large bowl, stir together the oats, pecans, flaxseed, cinnamon and salt. Keep the coconut aside for now; it goes in partway through baking so it toasts without burning.
- In a small bowl, whisk the melted butter, brown sugar, applesauce and vanilla until smooth.
- Pour the butter mixture over the oat mixture and stir until every oat is coated.
- Spread the granola on the baking sheet in a tight, even layer about 1/2 inch thick and press it down firmly with a spatula so it bakes into clusters.
- Bake for 25 minutes without stirring, then sprinkle the coconut evenly over the top and press it in lightly.
- Rotate the pan and bake 12 to 15 minutes more, until the coconut is golden and the granola is deep brown at the edges.
- Let the granola cool on the pan, untouched, for at least 30 minutes until fully crisp.
- Break the granola into large clusters, then scatter the chopped chocolate chips over them and toss gently. Store in an airtight jar.
