  • 1 container (6 oz)170 gPlain Greek yogurt, nonfat
  • 2⅛ tsp15 gHoney

Steps

  1. Heat the oven to 425°F (220°C). Brush a 12-cup muffin-top pan or a silicone waffle mold set on a sheet pan with the canola oil.
  2. In a large bowl, whisk the flour, sugar, baking powder, baking soda and salt.
  3. In a second bowl, whisk the buttermilk, eggs, melted butter and vanilla until smooth.
  4. Pour the buttermilk mixture into the flour mixture and stir just until no dry streaks remain; a few lumps are fine. Let the batter rest 5 minutes.
  5. Divide the batter evenly among the oiled molds, filling each about three-quarters full.
  6. Bake 14 to 18 minutes, until puffed, golden and crisp at the edges and a toothpick comes out clean; the center should reach 160°F (71°C).
  7. While the waffles bake, stir the Greek yogurt with the honey in a small bowl, and toss the strawberries with the banana in another bowl.
  8. Cool the waffles 2 minutes, then loosen and divide among 4 plates. Top with the strawberry-banana mixture and a spoonful of the honey yogurt.
