  • 1½ tbsp20 gGranulated sugar
  • 2 tbsp30 gWater

  • ¼ tsp0.5 gGround cardamom

Steps

  1. Brew the espresso, two shots per mug, and keep it hot while you make the cocoa syrup.
  2. In a small saucepan over medium-low heat, whisk the unsweetened cocoa powder, sugar, cardamom, salt and water until smooth and glossy, about 1 minute.
  3. Take the pan off the heat and stir in the orange juice and vanilla to finish the mocha syrup; pour half of the syrup into each of two mugs.
  4. Pour half of the hot espresso into each mug and stir to blend it with the syrup.
  5. Rinse the saucepan, add the cold skim milk and heat over medium until steaming with small bubbles at the edge, about 3 to 4 minutes; do not boil.
  6. Off the heat, whisk the hot milk vigorously (or use a handheld frother) for about 1 minute until it doubles in volume with thick foam.
  7. Pour half of the hot milk into each mug, holding back the foam with a spoon, then spoon half of the foam onto each mug and serve hot.
