One-Pot Crispy Pork Spaghetti with Garlic Crumbs

Ingredients

  • 2½ tbsp36 gOlive oildivided
  • ⅓ cup40 gPlain dry breadcrumbs
  • 1 lb450 gGround pork, 84% lean
  • 3¼ cups sliced225 gWhite mushroomssliced
  • 10 cloves30 gGarlicthinly sliced
  • ¾ tsp1 gDried rosemarycrumbled
  • ½ tsp1 gCrushed red pepper
  • ½ tsp1 gBlack pepper
  • ¾ tsp4 gSaltdivided
  • 2 cups500 gLow-sodium chicken broth
  • 2½ cups600 gWater
  • 12 oz340 gPasta, dryspaghetti, broken in half
  • 6⅔ cups loosely packed200 gBaby spinach
  • ¼ cup chopped15 gFresh parsleychopped

Steps

  1. Prepare first: slice the mushrooms, thinly slice the garlic, chop the parsley and break the spaghetti in half.
  2. Heat one third of the olive oil in a large Dutch oven or wide pot over medium heat. Add the breadcrumbs and stir for 2 to 3 minutes until golden and crisp. Tip them into a bowl and wipe out the pot.
  3. Raise the heat to medium-high. Add the pork-ground and cook without stirring for 3 minutes so it crisps, then break it up and add the mushrooms, half of the salt and the black pepper. Cook until the pork is browned, the mushrooms are soft and the pork reaches 160°F (71°C), about 6 minutes.
  4. Lower the heat to medium-low and push the pork to the side. Add the remaining two thirds of the olive oil, the garlic, the rosemary and the red pepper flakes to the open space and cook gently for 2 minutes until the garlic is pale gold.
  5. Pour in the chicken broth and the water, add the remaining half of the salt and bring to a boil.
  6. Add the spaghetti and simmer uncovered for 10 to 12 minutes, stirring often so it doesn't stick, until the pasta is al dente and the liquid has thickened into a glossy sauce.
  7. Stir in the spinach until wilted, about 1 minute, adding a splash of water if the pot looks dry.
  8. Serve topped with the toasted breadcrumbs and the parsley.
