  • 2½ tbsp36 gOlive oil
  • 12 oz340 gWhole-wheat pasta, dryspaghetti

  • 2 medium400 gZucchinihalved lengthwise and sliced into half-moons
  • 1 medium110 gRed onionthinly sliced
  • 5 cloves15 gGarlicthinly sliced
  • 2 tbsp32 gTomato paste
  • 4⅔ cups1,100 gWater
  • 1¼ cups150 gShelled edamame, frozen
  • 1¼ cups leaves30 gFresh basilleaves torn
  • ½ tsp1 gCrushed red pepper
  • ⅓ cup grated30 gGrated Parmesan
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Prep first: press the tofu between towels for 10 minutes, then cube it. Halve the cherry tomatoes, slice the zucchini, red onion and garlic, and tear the basil leaves.
  2. Toss the tofu with the cornstarch and one quarter of the salt until evenly coated.
  3. Heat two thirds of the olive oil in a wide, deep pot over medium-high heat. Fry the tofu, turning, until golden and crisp on most sides, 8 to 10 minutes, then move it to a plate.
  4. Lower the heat to medium. Add the remaining third of the olive oil, the red onion and the garlic, and cook for 2 minutes until fragrant. Stir in the tomato paste and red pepper flakes for 1 minute.
  5. Add the spaghetti (broken in half if needed), cherry tomatoes, zucchini, half of the basil, the water, the remaining three quarters of the salt and the black pepper.
  6. Bring to a boil, then cook at a lively simmer, stirring and tossing often with tongs so the spaghetti doesn't stick, for 8 minutes.
  7. Stir in the edamame and keep cooking, stirring, until the spaghetti is al dente and the liquid has reduced to a glossy sauce, 3 to 4 minutes more. Add a splash of water if it gets dry before the pasta is done.
  8. Take the pot off the heat, fold in the crispy tofu and the remaining half of the basil, and serve topped with the Parmesan.
