Ingredients

  • 2 oz60 gChia seeds
  • 2½ tbsp50 gMaple syrupdivided
  • 1¼ tsp5 gVanilla extract
  • 2 medium400 gApplediced small
  • 2 tsp10 gLemon juice
  • 1½ tsp4 gGround cinnamondivided
  • 2 tbsp30 gWater
  • 1¼ cups100 gOld-fashioned rolled oats
  • ½ cup chopped50 gPecanschopped
  • 2¾ tsp12 gCanola oil
  • ⅛ tsp1 gSalt

Steps

  1. Make the pudding first: in a bowl, whisk the soy milk, vanilla and 20 g (about 1 tablespoon) of the maple syrup, then whisk in the chia seeds.
  2. Rest the chia seed mixture 10 minutes, whisk again to break up clumps, then cover and chill at least 2 hours or overnight until thick.
  3. While the pudding chills, toss the diced apple with the lemon juice so it stays bright.
  4. Make the crunch: heat the canola oil in a large skillet over medium heat. Add the oats and pecans and toast, stirring often, for 5 to 6 minutes until golden and fragrant.
  5. Drizzle 15 g (about 2 teaspoons) of the maple syrup over the oats and pecans, sprinkle with 1 g (about 1/2 teaspoon) of the cinnamon and the salt, and stir 1 minute more until glossy. Spread on a plate to cool and crisp. Wipe out the skillet.
  6. Cook the apples: return the skillet to medium heat and add the apple, the water, the remaining 15 g of maple syrup and the remaining 3 g of cinnamon. Cook, stirring, 6 to 8 minutes until the apple is tender and the liquid is syrupy. Let cool to warm or room temperature.
  7. Assemble in 4 glasses: spoon one quarter of the chia pudding into each glass in two layers, alternating with one quarter of the cinnamon apples per glass.
  8. Top each parfait with one quarter of the oat-pecan crunch just before serving so it stays crisp.
