Ingredients

  • 1⅓ cups110 gOld-fashioned rolled oats
  • ½ whole150 gMangodiced small
  • ½ medium60 gBananamashed
  • ¼ cup25 gSweetened shredded coconut
  • ½ oz15 gChia seeds
  • 1 large50 gEggsbeaten
  • ¼ cup60 gCoconut milk, canned
  • 1 tbsp25 gHoney
  • 1⅛ tsp5 gCanola oil
  • 2 tsp10 gLime juice
  • ¾ tsp3 gBaking powder
  • ½ tsp1 gGround cinnamon
  • ⅛ tsp1 gSalt

Steps

  1. Preheat the oven to 350°F (175°C). Brush a small loaf pan or 6-inch square pan with the canola oil and line it with parchment.
  2. Dice the mango and mash the banana before you start mixing.
  3. In a large bowl, stir together the oats, chia seeds, baking powder, cinnamon, salt and sweetened shredded coconut.
  4. In a second bowl, whisk the egg, mashed banana, canned coconut milk, honey and lime juice until smooth.
  5. Pour the egg mixture into the oat mixture and stir until evenly moistened, then fold in the mango. Let it stand 5 minutes so the chia seeds and oats absorb some liquid.
  6. Spread the batter into the prepared pan and press it level.
  7. Bake 30 to 35 minutes, until the top is golden, the center is set and a toothpick comes out clean; the center should reach 160°F (71°C).
  8. Cool in the pan for 15 minutes, lift out by the parchment and cut into 4 bars.
