- 2 tbsp24 gOlive oildivided
- 4¼ cups chopped200 gRomaine lettucelarge whole leaves
- ¾ cup chopped150 gTomatoessliced
- 2½ tbsp40 gYellow mustard
Steps
- Make the quick pickles first: in a bowl, stir the cider vinegar, water, sugar and one quarter of the salt until dissolved, then add the cucumber, the sliced half of the red onion and the dill. Set aside for at least 20 minutes.
- Toss the sweet potato wedges with half of the olive oil and one quarter of the salt.
- Heat a large skillet over medium heat, add the sweet potato, cover and cook 15 to 18 minutes, turning a few times, until tender and browned. Move to a plate and keep warm.
- Meanwhile, in a bowl, gently mix the ground turkey with the grated half of the red onion, the garlic powder, smoked paprika, black pepper and the remaining half of the salt. Shape into 4 patties about 3/4 inch thick, pressing a small dent in each center.
- Add the remaining half of the olive oil to the skillet over medium-high heat. Cook the patties 5 to 6 minutes per side, until browned and 165°F (74°C) in the center.
- Lay out the romaine leaves in stacks of two or three. Spread the mustard over the patties, set each patty on the romaine, top with the tomato and drained quick pickles, then wrap the leaves around.
- Serve the lettuce-wrapped burgers with the sweet potato wedges.
