  • 2 medium220 gYellow onionthinly sliced
  • 2¾ tsp15 gMiso paste
  • 1½ tsp10 gMaple syrup
  • 4 cups shredded280 gGreen cabbagefinely shredded
  • 2 medium120 gCarrotsgrated
  • 1½ tbsp20 gApple cider vinegar
  • 1¾ tsp8 gToasted sesame oil
  • 2 medium30 gGreen onionsthinly sliced

Steps

  1. Bring the lentils and 600 g of the water to a boil in a covered pot, then simmer 25 to 30 minutes until very tender; drain well and let cool 10 minutes.
  2. Meanwhile, toss the cabbage and carrot with the cider vinegar, toasted sesame oil and half the green onions; chill the slaw while you cook.
  3. Mash the cooled lentils roughly in a bowl, leaving some texture. Pulse or crush the oats until coarse, then add them to the lentils with the walnuts, egg, garlic, cumin, paprika, salt and black pepper; mix and rest 10 minutes so the oats absorb moisture.
  4. Shape the lentil mixture into 4 patties about 3/4 inch thick.
  5. Heat half the olive oil in a large skillet over medium heat. Add the yellow onion and cook 12 to 15 minutes, stirring, until soft and golden. Add the mushrooms and cook 6 to 8 minutes until browned.
  6. In a small bowl, whisk the miso paste and maple syrup into the remaining 50 g of water. Pour the miso mixture over the mushrooms and yellow onion and stir 1 minute until glossy. Transfer to a bowl and wipe out the skillet.
  7. Heat the remaining half of the olive oil in the skillet over medium heat. Cook the patties 4 to 5 minutes per side until crusty and the center reaches 160°F (71°C).
  8. Divide the slaw among 4 plates, set a patty on each, pile on the miso mushrooms and yellow onion, and finish with the remaining half of the green onions.
