  • ¾ tsp2 gBlack pepper
  • ⅔ cup50 gOld-fashioned rolled oats
  • ⅓ cup grated30 gGrated Parmesan
  • 1½ tbsp20 gUnsalted buttermelted

Steps

  1. Preheat the oven to 375°F (190°C). Prepare the vegetables, chicken and parsley as listed before you start cooking.
  2. Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Season the chicken thighs with half the salt and half the black pepper, then brown them for about 5 minutes; they will finish in the oven.
  3. Add the onion, celery, carrot and mushrooms and cook for 5 minutes until softened. Stir in the garlic and thyme and cook for 1 minute.
  4. Stir in the rice to coat, then pour in the chicken broth, the lemon juice, the remaining half of the salt and the remaining half of the black pepper. Bring to a simmer.
  5. Cover tightly and bake for 25 minutes.
  6. Meanwhile, make the oat crumb: mix the oats, Parmesan, melted butter, lemon zest and half the parsley in a small bowl.
  7. Uncover, stir in the peas, then scatter the oat crumb evenly over the top. Bake uncovered for 15 to 20 minutes, until the rice is tender, the crumb is golden and the chicken reaches 165°F (74°C).
  8. Rest for 5 minutes, then sprinkle with the remaining half of the parsley and serve.
