  • ½ cup (120 ml)120 gOrange juice
  • 2½ tbsp40 gLemon juice
  • 2 tsp4 gLemon zest
  • 2½ tbsp35 gLow-sodium soy sauce
  • 2⅛ tsp15 gHoney
  • 1 tbsp8 gCornstarch
  • 1½ tbsp20 gCanola oil
  • 1¼ tsp6 gToasted sesame oil
  • 2¾ tsp8 gSesame seedstoasted

Steps

  1. Rinse the brown rice, then simmer it with the water in a covered pot for about 40 minutes until tender; spread it on a tray to cool and dry slightly.
  2. While the rice cooks, make the sauce: whisk the orange juice, lemon juice, lemon zest, soy sauce, honey, cornstarch and half of the ginger in a bowl.
  3. Heat half of the canola oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, until browned and it reaches 165°F (74°C); move the turkey to a plate.
  4. Add the remaining half of the canola oil to the skillet. Stir-fry the green onion whites, garlic and the remaining half of the ginger for 30 seconds.
  5. Add the cabbage and kale and stir-fry 3 to 4 minutes until crisp-tender.
  6. Add the cooled rice and press it into the pan; let it sizzle 2 to 3 minutes undisturbed so some grains crisp, then toss.
  7. Return the turkey to the skillet, stir the sauce and pour it in, then add the spinach and toss 1 to 2 minutes until the sauce glazes everything and the spinach wilts.
  8. Drizzle with the toasted sesame oil and top with the green onion greens and sesame seeds before serving.
