- ¼ cup60 gLemon juice
- 2 tsp4 gLemon zest
- 1½ tbsp30 gHoney
- 2½ tbsp35 gLow-sodium soy sauce
- 1 tbsp8 gCornstarch
- ⅓ cup80 gWatercold
- 1 tbsp14 gCanola oil
- 1⅛ tsp5 gToasted sesame oil
- ½ tsp1 gCrushed red pepper
- 2 medium30 gGreen onionsthinly sliced
- 2¾ tsp8 gSesame seedstoasted
Steps
- Bring a large pot of water to a boil for the noodles.
- While it heats, slice the red bell pepper, green bell pepper, red onion and green onion; grate the ginger and mince the garlic.
- Make the sauce: in a bowl whisk the lemon juice, lemon zest, honey, low-sodium soy sauce, cornstarch and cold water until smooth. Set aside.
- Cook the whole-wheat pasta until just tender, about 1 minute less than the package says. Drain, rinse briefly and toss with the toasted sesame oil.
- Heat half the canola oil in a large skillet over high heat. Add the ground pork in a flat layer and cook undisturbed 3 minutes to crisp, then break up and cook until browned and it reaches 160°F (71°C). Move the pork to a plate, leaving the pan juices in the skillet.
- Add the remaining half of the canola oil to the skillet. Add the red onion, red bell pepper and green bell pepper and stir-fry 3 to 4 minutes until charred at the edges but crisp.
- Add the ginger, garlic and red pepper flakes and stir 30 seconds until fragrant.
- Return the pork to the skillet and add the sesame-tossed noodles. Stir the sauce and pour it in. Toss 1 to 2 minutes until the sauce thickens and glazes the noodles.
- Serve topped with the green onion and sesame seeds.
