Layered Peach Mint Tea with Oat Cream

Ingredients

  • 2 cups500 gWaterdivided: 300 g for the tea, 200 g for the oat milk
  • 1½ tbsp chopped8 gFresh mintleaves lightly bruised, plus a few sprigs for garnish
  • 1 tbsp20 gHoney
  • ⅓ cup25 gOld-fashioned rolled oats
  • 1½ medium200 gPeachessliced
  • 1½ tsp8 gLemon juice

Steps

  1. Bring the 300 g portion of water to a boil in a small pot, then turn off the heat.
  2. Add the mint, cover and steep 6 minutes to make the herbal tea; remove the mint leaves, keeping the sprigs aside for garnish.
  3. Stir the honey and lemon juice into the warm mint tea until the honey dissolves, then chill the tea in the fridge about 25 minutes until cold.
  4. While the tea chills, make the oat milk: blend the oats with the remaining 200 g of water for 30 seconds until smooth; for a smoother drink, strain it through a fine sieve.
  5. Add the peach to the oat milk in the blender and blend until silky and pourable.
  6. Fill two glasses with ice and pour half of the cold mint tea into each glass.
  7. Slowly pour half of the peach oat milk over each glass so it floats in a layer, garnish with the reserved mint sprigs and stir before sipping.
