- ¾ cup diced120 gMangodiced
- 2½ tbsp grated15 gFresh gingerpeeled and thinly sliced
- ¼ cup60 gWater
- 2½ tsp18 gHoney
- 1¼ tsp6 gLime juice
Steps
- Brew the green tea strong, then refrigerate it until cold, about 30 minutes.
- Meanwhile, make the syrup: in a small pot, simmer the water, the sliced fresh ginger and the diced mango for 5 minutes until the mango is very soft.
- Off the heat, stir in the honey and lime juice, mash the mango well with a fork, then strain the syrup through a sieve, pressing on the solids; discard the fresh ginger slices. Chill the syrup alongside the tea.
- Divide the mango-ginger syrup between two tall glasses, add ice, and pour half of the chilled green tea into each glass.
- Pour half of the cold skim milk evenly into the two glasses and stir.
- Make the cold foam: shake the remaining half of the skim milk hard in a lidded jar for about 1 minute until thick and frothy.
- Spoon the foam over each glass and serve right away.
