Steps
- Prepare all vegetables first: shred the cabbage, slice the mushrooms, trim the snow peas, cut the carrot into matchsticks, slice the cucumber, chop the kimchi, and slice the green onion, keeping the whites and greens apart.
- In a small bowl, stir together the low-sodium soy sauce, brown sugar and red pepper flakes; set this soy seasoning mixture aside.
- Divide the spinach and cabbage among four bowls as the leafy base.
- Heat the canola oil in a large skillet over medium-high heat. Add the mushrooms and cook 5 minutes until browned.
- Add the snow peas and carrot to the mushrooms and cook 2 minutes until crisp-tender; move this vegetable mixture to a plate.
- Add the ground beef to the same skillet and cook, breaking it up, 6 to 7 minutes until browned and it reaches 160°F (71°C).
- Stir the garlic, ginger and green onion whites into the beef and cook 1 minute until fragrant.
- Pour the soy seasoning mixture over the beef, return the mushroom vegetable mixture to the skillet, and toss 1 minute. Remove from heat and stir in the toasted sesame oil.
- Spoon the beef and vegetables over the greens, then top each bowl with the cucumber, kimchi, green onion greens and sesame seeds. Serve warm.
