Iced Lemon-Ginger Green Tea Milk

Creamy, mellow green tea with whole milk, brightened by a fragrant lemon-zest and ginger honey syrup that keeps the milk silky.

Iced Lemon-Ginger Green Tea Milk

Ingredients

  • 1⅓ cups (320 ml)320 gBrewed green teabrewed and chilled
  • ⅔ cup (160 ml)160 gWhole milkcold
  • 2½ tbsp40 gWater
  • 1 tbsp24 gHoney
  • 2 tsp4 gLemon zest
  • 1 tbsp grated6 gFresh gingerthinly sliced

Steps

  1. Make sure the green tea is brewed and chilled in the fridge before you start, so it is cold when you assemble the drinks.
  2. In a small pot, combine the water, honey, lemon zest and ginger. Bring to a gentle simmer over medium heat and stir until the honey dissolves, about 2 minutes.
  3. Take the pot off the heat and let the lemon-ginger syrup steep and cool for 15 to 20 minutes, then strain out the ginger and zest.
  4. Fill two glasses with ice. Pour half the lemon-ginger syrup into each glass, then divide the chilled green tea between them and stir.
  5. Pour half the cold whole milk over each glass, letting it swirl into the tea; stir gently before drinking. Using zest instead of lemon juice keeps the milk smooth rather than curdled.
