Steps

  1. Rinse the rice, then simmer it with the water in a covered pot over low heat for 18 minutes; rest 5 minutes, spread on a tray and cool at least 30 minutes (or chill overnight) so the grains dry out.

  3. Heat one third of the canola oil in a large skillet over medium-high heat. Add the beaten egg, scramble until set and no longer runny, then move it to a plate.
  4. Add another third of the canola oil and the chicken thigh; season with the black pepper and cook 6 to 7 minutes until browned and 165°F (74°C) inside. Move to the plate with the egg.
  5. Add the remaining third of the canola oil, the broccoli and the mushrooms; stir-fry 4 minutes until the mushrooms brown and the broccoli is bright green.
  6. Add the ginger, garlic and green onion whites; stir 1 minute until fragrant.
  7. Add the cooled rice, press it into the pan and let it crisp 2 minutes, then toss and repeat once.
  8. Return the chicken and egg, pour in the soy-oyster sauce and toss until evenly coated and hot.
  9. Drizzle with the toasted sesame oil, scatter the green onion greens and sesame seeds, and serve.
