Steps

  1. Prep first: chop the onion, dice the red bell pepper, mince the jalapeño and garlic, rinse the rice and red lentils separately, halve the cherry tomatoes, chop the parsley and crumble the feta.
  2. Heat the olive oil in a Dutch oven over medium heat. Add the onion and red bell pepper and cook, stirring, until soft and lightly browned, about 8 minutes.
  3. Add the jalapeño and garlic and cook 1 minute. Stir in the tomato paste, paprika, cumin and red pepper flakes and cook 2 minutes until the paste darkens.
  4. Add the rice and red lentils and stir for 2 minutes to coat and toast the grains.
  5. Pour in the vegetable broth, add the salt and black pepper, and bring to a boil. Cover, reduce the heat to low and simmer 18 minutes until the liquid is absorbed.
  6. Take the pot off the heat, scatter the cherry tomatoes over the top, cover again and let rest 10 minutes so they soften in the steam.
  7. Drizzle the lemon juice over the pilaf, fluff gently with a fork, and fold in half of the parsley.
  8. Serve topped with the feta and the remaining half of the parsley.
